Weekly Meat Market Update 11-27

The cutout value moved slightly higher to end last week. End cuts, Loins and Round meat remained about steady while Tenderloins and Rib prices are moving higher due to limited supplies and greater demand moving toward the winter holidays.
Loins – Steady
Rounds – Just Steady
Chucks – Steady to Slightly Higher
Ribs – Higher
Grinds – Steady

Rounds
Prices were mostly steady on all round meats to end last week. Expect prices to continue to remain about steady once again.
Insides- Prices remained mostly steady to end last week. This week prices have remained steady to slightly lower due to an increase supplies and slower demand. Expect steady to possibly lower prices next week due to increased supplies.

Flats- Prices held about steady last week with some slight increases as the week ended. This week prices have remained about steady to slightly lower due to slower demand.

Eyes- Eyes prices remained steady to end last week due to slow demand. Expect steady to slightly lower prices this week due to increased supplies and slower demand.

Peeled Knuckles- Peeled Knuckles prices remained about steady to last week as demand has slowed and supplies are increasing.

 

LOINS
Prices remained about steady on all middle meats to end last week due to increasing inventories and slower demand. Expect prices to remain steady once again this week. Tenderloins and Ribs are holding true to form due to the upcoming holidays and packers are pushing for higher prices as supplies are extremely tight.
Strips- Strip prices held mostly steady last week due to slow demand. This week prices have held mostly steady as supplies are increasing and demand has slowed.

Short loins- Markets were about steady to slightly lower for Choice and steady on Select Short loins. Expect this trend to continue due to slow demand and increasing supplies.

Top Butts- Top Butt prices remained about steady to end last week. Expect steady prices into next week due to slower demand.

Ball Tips- Prices were steady to end last week due to slower demand and increasing supplies. Expect prices to remain about steady into next week.

Tri Tips- Prices held about steady to end last week due to increasing supplies and slower demand. Expect prices to move slightly lower once again due to slow demand.

Tenderloins- Prices moved higher last week. Prices should remain higher for the next couple weeks heading into the Holidays due to increased demand and limited supplies.

 

RIBS
Prices last week moved higher on all sizes of Choice and Select Ribeyes as we approach the winter holidays. This week prices have moved higher once again due to very tight supplies and heavy demand.
Ribeyes- Prices on all Choice and Select Ribeyes stayed moved higher to end last week. Expect prices to increase drastically as processors and retailers look to purchase product and limited supplies and heavy demand.

BI Ribeye’s and 109 Ribs- Prices on all Bone-In Ribs moved higher to end last week. Expect prices to move slightly higher as ribs of all kinds are very tight as retail and processors begin to prepare for the holidays.

 

CHUCKS
Prices moved slightly higher last week on all chuck meat due to good export demand, tighter supplies and first of the month retail ads. All Thin Meats held about steady to slightly lower.
Chuck Rolls- Chuck Rolls prices moved slightly higher due to increased demand. Expect prices to remain steady or inch slightly higher into next week as well.

Clods- Markets moved slightly higher last week due to increasing demand. This week prices are holding about steady to slightly higher due to increased demand for retail feature ads.

Chuck Tenders- Prices last week remained about steady to slightly lower. Expect prices to remain about steady as a result of increasing supplies and slower demand.

Teres Major- Prices moved slightly lower late last week. This week prices have remained about steady due to slow demand and increasing supplies.

 

THIN MEATS AMD GRINDS
Flanks- Flank prices moved slightly lower last week as demand has slowed. Expect steady prices next week as demand has slowed and supplies are increasing.

Flap Meat- Flap Meat prices remained steady to slightly lower last week. This week prices have held about steady due to increasing supplies and slower demand.

Briskets- Brisket prices held mostly steady as supplies remain in check but demand has slowed. This week prices have remained about steady to slightly lower due to increasing inventories and slower demand.

Skirt Meat- All skirt prices remained steady to slightly lower last week as supplies are starting to increase. Expect prices to remain about steady to slightly lower due to increasing supplies and slower demand.

Special Trim, Blade Meat and Pectoral Meat- Prices were slightly lower last week due to slow demand and increasing supplies. This week prices are holding about steady to slightly lower once again.

Grinds- Ground beef prices remained about steady to end last week as demand has slowed and supplies are increasing. Expect slightly higher prices next week due to first of the month retail ads.

 

PORK
Hams are called just steady as many processors and retailers are stocked up for the upcoming holidays. Bellies are holding strong due to strong bacon production. Loins maintain a barely steady to weak call due to seasonally softening demand. Butts moved slightly higher and Ribs are just steady.

Loins – Steady to Lower
Butts – Steady to Slightly higher
Ribs – Just Steady
Trim – Just Steady

Loins- Bone-in Loin and Boneless Loins remained mostly steady to slightly lower due to slower demand and increasing supplies. Expect this trend to continue.

Butts- Butt prices were mostly steady to slightly higher to end last week as demand has picked up and live hog prices has increased. Expect prices to remain about steady or may increase once again due to higher hog prices.

Ribs- Sparerib prices were steady to slightly lower last week on all sizes. This week prices have moved seasonably lower due to slower demand.

Trim- Prices ended the week about steady to slightly lower on trim. This week prices are holding about steady but expect prices to move lower moving into next week as seasonal demand will start to diminish.

Picnics- Market is steady on Boneless Picnics and steady on Cushion Meat.
