  • ¼ cup brown sugar
  • 2 Tbsp ginger garlic paste
  • 2 Tbsp shaoxing wine
  • 2 Tbsp oyster sauce
  • 2 Tbsp dark soy sauce
  • 1 Tbsp fermented bean curd, smashed
  • 1 tsp Chinese 5 spice
  • 1 tsp kosher salt

  • Garlic butter, melted
  • 1 cup pea shoots (or other micro greens/sprouts)

Preparation

Char Siu Sauce
  1. Mix all of the sauce ingredients in a bowl until sugar is dissolved and sauce looks smooth. Use half of the sauce to marinate the pork chops overnight in a resealable plastic bag.
Sandwich and Assembly
  1. Allow pork chops to come to room temperature over an hour, then grill on medium-high heat for 4-5 minutes per side (or until internal temp reaches 140°F), basting with remaining sauce as necessary. Allow pork chops to rest for 5-10 minutes after grilling.
  2. Meanwhile, spread garlic butter lightly on both halves of the buns, then lightly toast on the grill. Assemble sandwich with pork chops, extra char siu sauce, and greens.

Tips

I ended up using a combination of bok choy microgreens and sunflower sprouts for a nice fresh crunch to go with this flavor bomb.
