Char Siu Pork Chop Sandwich
with Madeline’s croissant bun & microgreens

Ingredients
Char Siu Sauce
- ¼ cup hoisin sauce
- ¼ cup brown sugar
- 2 Tbsp ginger garlic paste
- 2 Tbsp shaoxing wine
- 2 Tbsp oyster sauce
- 2 Tbsp dark soy sauce
- 1 Tbsp fermented bean curd, smashed
- 1 tsp Chinese 5 spice
- 1 tsp kosher salt
Sandwich and Assembly
- 2 pork chops, about an inch thick (Superior Foods Featured Item: #88518 – (DeVries Meats)
- Char siu sauce
- 2 croissant buns (Superior Foods Featured Item: #10877 – (Madeline’s Pâtisserie)
- Garlic butter, melted
- 1 cup pea shoots (or other micro greens/sprouts)
Preparation
Char Siu Sauce
- Mix all of the sauce ingredients in a bowl until sugar is dissolved and sauce looks smooth. Use half of the sauce to marinate the pork chops overnight in a resealable plastic bag.
Sandwich and Assembly
- Allow pork chops to come to room temperature over an hour, then grill on medium-high heat for 4-5 minutes per side (or until internal temp reaches 140°F), basting with remaining sauce as necessary. Allow pork chops to rest for 5-10 minutes after grilling.
- Meanwhile, spread garlic butter lightly on both halves of the buns, then lightly toast on the grill. Assemble sandwich with pork chops, extra char siu sauce, and greens.
Tips
I ended up using a combination of bok choy microgreens and sunflower sprouts for a nice fresh crunch to go with this flavor bomb.
